Toasted Besan Chutney (Chickpea, Senaga Pindi Pachadi)
This is our favorite chutney to pair with rava dosa – a thin, crispy dosa that resembles lace!
Toasted Besan Chutney
Serves approx. 4
Ingredients
Chutney
- ½ cup toasted basen (chickpea flour)
- 1 cup water
- 1 tbsp tamarind
- ¼ tsp turmeric (try with ⅛ tsp turmeric next time)*
- ¼ tsp jaggery (raw sugar cane) (could substitute with brown sugar if you don’t have)
- ½ tsp salt plus more to taste if needed
Tadka
- 1 tbsp cooking oil
- 1 tsp urad, split and without skin
- ½ tsp cumin
- ½ tsp coriander seeds
- ¼ tsp methi seeds (fenugreek seeds)
- 4 dry red chilies
- 2 thai chilies
Directions
- Add the basen, water, tamarind, turmeric, jaggery, and salt to the blender and blend.
- Transfer the chutney to a bowl for serving.
- For the tadka, heat a pan with cooking oil.
- Add the tadka spices and thai chilis to the pan and fry until the urad is light brown.
- Mix the tadka into the chutney and serve. Check for salt if more is needed.
